(Vegan) Green Goddess Salad Dressing Designed by award-winning Dr. Constable, our food balances blood sugars to promote more energy, weight loss and optimal health.
Ingredients
1 cup basil leaves
1 cup spinach leaves
2 cloves garlic
2 small shallot
Juice of 2 lemons
1/4 cup of olive oil
1/4 cup of raw cashews or raw walnuts
1/3 cup of nutritional yeast
1 tsp salt
2 Tbsp rice vinegar (make sure there is no sugar added)
How to prepare
- Place all ingredients into a food processor (or blender) and blend until smooth.
- Taste, and add additional salt if desired.

Store this dressing in a jar or air-tight container in the refrigerator for up to two weeks.

Pairs well with eggs, as a pasta sauce (black bean pasta), as a dip, and added to sandwiches and burritos.
