Tapioca ‘Rice’ PuddingDesigned by award-winning Dr. Constable, our food balances blood sugars to promote more energy, weight loss and optimal health.
Ingredients
2 Diata Health vanilla shakes
1 cup unsweetened vanilla almond milk
2 Tbsp monkfruit sugar
1 package of miracle rice (we like this one)
Optional toppings: fresh raspberries, sliced strawberries and/or a fresh mint leaf
Optional serving dishes: 6 small ramekins (such as these)
How to prepare
- Rinse the miracle rice in cold water. Using a sieve or colander, drain excess water and set rice aside.
- Using cake mixers, beat together the vanilla shakes, unsweetened vanilla almond milk, and monkfruit sugar. Mix on medium until smooth, usually about 60-90 seconds. Scrape the sides and bottom of the mixing bowl and mix on high for another 30 seconds.
- Optional flavoring: Add in any additional desired flavors (such as nutmeg, cinnamon or vanilla extract) and mix for another 15 seconds.
- Add in miracle rice pearls (about 1 cup to 1.5 cups, drained) and beat on low for 5-10 seconds or until evenly dispersed.
- Spoon pudding into serving bowls and place into the refrigerator to cool for 40 minutes.
- Top with optional toppings before serving and enjoy.

This recipe can be easily adjusted to change the flavor profile. We like to add 1/2 tsp nutmeg or 1 tsp vanilla extract.

This recipe is also great for dinner parties. It is very easy to make and can be served in pretty little ramekins, each topped with a raspberries or sliced strawberries.
