Homemade Crustless Pumpkin PieDesigned by award-winning Dr. Constable, our food balances blood sugars to promote more energy, weight loss and optimal health.

Ingredients

6 egg whites
30oz organic pumpkin purée (typically 2 cans)
1/2 cup granulated monkfruit sugar
2 vanilla Diata Health protein shakes
1/2 tsp ground cloves
3/4 tsp cinnamon
2 tsp vanilla extract
1 tsp pink Himalayan salt
Baking spray (we like avocado oil spray) to 'grease' pans

Cooking tools: 9" pie dish or 4 mini pie dishes (ramekins)

How to prepare

- Preheat your oven to 300°F on the convection bake setting (or 325°F on the regular bake setting) and prepare your baking dish by coating it with avocado spray.

- In a large bowl, whisk egg whites together until stiff peaks form. (Here is a picture of what 'stiff peaks' should look like.)

- In a separate bowl, mix the organic pumpkin purée, monkfruit sugar, Diata Health vanilla protein powder, vanilla extract, Himalayan salt and spices. Beat together on medium-high until smooth.

- Fold egg whites into the batter, stopping once mixture is smooth in order to keep the mixture light and fluffy. To fold egg whites into a batter, add 1/3 of the egg whites into mixture at a time; using a rubber spatula, slice and turn egg whites until smooth. Remember to be gentle when folding in order to maintain the desired consistency of the whisked egg whites.

- Transfer pumpkin pie custard into a pie pan and place into the oven for apprx. 40 minutes. You will know your pie is done when you can insert a clean fork into the pie and it comes out clean.

- Remove pie dish from the oven and let it cool uncovered (until warm or room temperature).

- Serve with a dollop of non-fat whipped cream and a sprinkle of cinnamon on top. Enjoy!

Tips & tricks

Baking the night before? If baking the day before, be sure to let the pie cool to room temperature before covering and placing in the fridge. Why? If you cover the pie before it has fully cooled, the plastic wrap will hold in the condensation and make your treat a bit watery (not ideal!).

The perfect COVID-approved dessert: This dessert can also be baked and served in individual ramekins. How? Prep pumpkin custard as described above and spoon into individual ramekin, about 1.5 inches deep. Bake at 300°F convection for apprx. 25 minutes until done (using the fork test).
